How do you know when an offer has run it's course?

After my first offer was a complete bomb using 7search, I decided to start up 3 new offers in the gift card niche.

It always works where the first couple days, they go strong..

I get around $0.20 EPC with a high CR.

Just like all offers I'm assuming, there comes a time to optimize.

I block 1 or 2 non-performing subids and block some irrelevant keywords and after that, I usually get a few more leads and then NOTHING...

How do you know when an offer has run it's course?

Keep optimizing and keep on adding keywords and testing them. There will come a time when your profit will be much more than your spend and that is the time when you can let it run on autopilot.
