Dating is a very competitive market. Even finding a niche can be challenging.
This should not discouraged you from trying. However, I would read through the threads that explain how to find a niche (if you don't know yet) and research the dating market for a niche that you can approach.
CJ has plenty of dating affiliate programs listed that you can check out.
Dating is a good niche. Hogh demand and all that. I have a dating site that I have not done any off page SEO for and still gets traffic. [Busy with other projects]

CJ is Commission Junction and it's the largest affiliate network. It has quite a few dating programs but you may also want to check out Azoogle or Neverblueads or one of the other CPA networks.

There are several affilaite programs wherether you go on CJ, LinkShare or the merchant itself you will find that sometimes you can have a better deal for the long run (after you have a bit of conversions) signing up with directly with the metchant.
You will have more room to negociate (if comissions are really high).
However here are a few tips you should take with you if you decide to promote dating sites:
1) split your content network from your search.
2) on the content network, try to have "loud" or catchy headlines since the quality score does not apply there and people aren't really looking for you such as " You have 1 Message" - one of your collegues have a crush on you... that sounds better then "date singles in your town" ....
However this rule applies only for Content nextwork.
3)use site placments- know your target audience and what they are looking for. use free tools like quantcast to see demographics. for young crowd youtube and Myspace are a good place to start.
4) Use Day partying - people tend to search for dating sites later in the evening when they are done with work.- increase your bids then .
Last ... Use Google's optimizer to get the best landing page
And off couse ....test, test and test again!
