I split it in 2 main activities - onsite and offsite.
Onsite SEO has to do with making each page closely related to a particular subject so search engine have an easy time figuring out what the page is about exactly. Priority is to get a good title for each page on your website and match the content to that title.
Offsite SEO is mainly about linking as much pages on other people's sites to yours. A few good offsite SEO methods are writing Press Releases and articles, submitting to a few quality directories, getting involved in discussions in your niche through forums, and so on.

The top SEO activity is creating great content -- that gets you links and traffic!
I'm glad some one said that. To re-iterate, if your content is good enough you don't need to bother about backlinking because visitors to your site will do it for you.
