More Confuse in remembering SEO types and methods

I have totally confused in remember the SEO types and methods.Some websites were described the SEO method is 1.ON page 2.OFF page and type as 1.White hat 2.Black hat 3.Gray hat.
But some websites were described the SEO method is 1.White hat 2.Black hat 3.Gray hat and type as 1.ON page 2.OFF
So what is the actual meaning for SEO methods and types?

Don't be confused. The main seo method is On page and Off page.
On page means changes on site like add meta title, description, keyword tag, add image "alt" tag, give H1 to H6 tag etc.
Off page means generate quality backlink that generate traffic to our site and boost on SERP.

White hat, Black hat and Grey hat is a technique in which you can generate backlinks in unnatural way and violate SE rules and regulations.
