If I list my website in an American directory, will I receive the benefits of this in Google UK? Or is it best to try and only list in UK directories?

i think it still helps but only provides a little effect. if you wanna rank high in Google UK then get more backlinks from UK based sites

It's always best to submit into directories from your website's home country. This way you get the best results from your local search engine.

The firm I work for is based in the UK and we only submit to UK based directories.

It takes soo long to submit manually that you've got to make sure you've got a good chance of getting your entry added to the directory, and many US/World directories reject UK submissions.
