These hosting companies scale with you. Always start with shared hosting (preferably cloud hosting) and once you hit the thresholds (CPI/Storage) go to the next level. If you thinking of switching for speed ... then its best to change your hosting to cloud (similar Storage to shared but 2-4x faster)
Running multiple domains on a webhosting account is not really recommended if you are doing it for multiple businesses, otherwise if its your own websites knock yourself out! You can save some money doing it but if your looking to be a website designer, its best to give each business their own...
I use Hostgator & Godaddy. I've not used bluehost but have considered switching because of the auto updates for wordpress plugins for every domain on your hosting account. If you plan on having multiple domains this saves you a ton of time updating manual or needing to create a wordpress multisite
